It’s that time of year again when everybody’s Irish, the rivers run green and it’s time to gather your friends for a toast or two.

Instead of the traditional Green Beer or Green ‘tini try whipping up some of these cupcakes for your friends and family.

Guinness Cupcakes Recipe

Guinness Cupcake Recipe from KitchAnn Style

Ingredients

Cupcake

  • 1 cup Guinness
  • 1 stick unsalted butter + 1 TBS
  • 3/4 cup cocoa
  • 2 cup dark brown sugar
  • 3/4 cup sour cream
  • 2 eggs
  • 1 Tbs vanilla extract
  • 2 cup flour
  • 2 1/2 tsp baking soda

Basic Frosting

  • 8 oz cream cheese,
  • 1 1/4 cup icing sugar
  • 1/3 cup milk or

Baily's Cream Cheese Frosting

  • 8 oz cream cheese, softened
  • 4 oz unsalted butter softened
  • 2 cup confectioner's sugar
  • 4-6 Tbs Bailey's Irish Cream
  • For: 12
  • Cooking: 25 min
  • Ready in: 25 min

Instructions

  1. Preheat oven to 350 degrees. Line cupcake tray.
  2. Combine the Guinness and the butter (chopped into 1 inch chunks) in a double boiler and heat to melt the butter. Remove from heat and whisk in the cocoa and sugar.
  3. In a bowl, combine sour cream, eggs and vanilla, then add to stout mixture.
  4. Sift together flour and baking soda and fold into batter.
  5. Pour into cupcake cases and bake for 25 mins or until toothpick comes out clean. Let stand 10 mins and then remove from tray and cool on a wire rac
  6. In a mixer, whisk together ingredients for icing and spread over cooled cupcakes.
